Ingredients

  • 2 large carrots, peeled
  • 1 small zucchini
  • 1 small yellow squash
  • 1 can cannellini beans, rinsed
  • 3 tbsp fresh mint
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  • Peel carrots, zucchini, and squash into ribbons
  • Add ribbons to a bowl
  • Rinse and drain beans, then add
  • Add mint, vinegar, oil, salt, and pepper
  • Toss gently and serve immediately

Notes

Serve immediately for best texture
Store dressing separately if prepping ahead
Substitute zucchini if squash unavailable
