Ingredients
  

  • 2 oz tequila blanco
  • 0.75 oz fresh lime juice
  • 1 oz passionfruit puree
  • 1 oz raspberry syrup
  • 0.5 oz simple syrup (optional, to taste)
  • 1 egg white
  • ice (for shaking and serving)
  • fresh raspberries or lime twist, for garnish

Method
 

  1. Add all ingredients, including egg white, to a shaker without ice. Shake vigorously for 15–20 seconds to build foam.
  2. Add ice to the shaker. Shake again until cold and frothy.
  3. Strain into a chilled coupe or rocks glass.
  4. Garnish with raspberries or a lime twist. Serve immediately.
