Instructions
Cooking Process
Season the chicken with salt and pepper.
Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat.
Add chicken in a single layer. Let it cook without moving it for a couple of minutes until golden. Stir and cook until mostly done, then move it to a plate.
Add the remaining butter, then toss in the mushrooms. Let them sit for a minute before stirring to allow them to brown.
Add garlic and Italian seasoning, then stir for about 30 seconds until fragrant.
Pour in the broth and add soy sauce or Worcestershire sauce if using. Scrape the browned bits off the bottom of the pan.
Add the chicken back in and simmer for 2 to 4 minutes until the chicken is cooked through.
For a thicker sauce, stir in the cornstarch slurry and simmer for 1 minute.
Finish with parsley and a squeeze of lemon if desired.
Notes
Do not crowd the pan during cooking to ensure everything browns properly. Leftovers reheat well with a splash of broth. Consider adding red pepper flakes for a spicy kick or a splash of heavy cream for creaminess.
