Ingredients
Pancake Mixture

Pancake mix
Just add water kind works fine

Water or milk
Milk makes it a little richer

tablespoons
Maple syrup
Some for the batter, extra for dipping
Filling

Breakfast sausage
Small patties or crumbles

Scrambled

Cheddar cheese
Or American cheese for classic melt

Butter or cooking spray
For the pan

Instructions
Cooking Components
Cook the sausage first: If using patties, cook and cut into quarters; if using crumbles, brown and set aside.
Scramble eggs in a nonstick pan with a little butter and a pinch of salt until soft and slightly underdone.
Mix pancake mix with water or milk per package instructions, then stir in 1 to 2 tablespoons of maple syrup.
Making Pancakes
Drop small circles of pancake batter onto a buttered skillet, cook until bubbles form and edges are set, then flip.
Pancakes should be about the size of the top of a muffin.
Assembling
On one mini pancake, add scrambled egg, sausage, and a small piece of cheese, then top with another mini pancake.
Warm assembled bites in the oven at 350°F for about 5 minutes to melt the cheese if needed.
Notes
These bites are perfect for meal prep and make great leftovers. Store in an airtight container after cooling completely to keep fresh.
