Instructions

Preparation

  • Mix graham cracker crumbs and melted butter in a bowl until fully combined.
  • Press the mixture firmly into the bottom of the trifle dish to create an even crust.

Making the Filling

  • In a chilled mixing bowl, whip the heavy cream until stiff peaks form.
  • In another bowl, beat the softened cream cheese until smooth and creamy.
  • Gradually add powdered sugar, key lime juice, zest, and vanilla extract to the cream cheese while mixing, scraping the sides of the bowl often.

Assembly

  • Gently fold the whipped cream into the lime mixture in thirds, being careful not to deflate the whipped cream.
  • Layer half of the lime filling over the crust.
  • Sprinkle with more graham cracker crumbs for added texture.
  • Repeat the layering process with the remaining filling and crumbs.
  • Top with extra crumbs and a sprinkle of lime zest for garnish.
  • Chill in the fridge for at least 2 hours before serving to allow flavors to meld.
