Hot Honey Chicken Skewers

Delicious chicken skewers glazed with a sweet and spicy hot honey sauce, perfect for a quick weeknight dinner or entertaining friends.

Ingredients

For the skewers

  • 1.5 pounds boneless skinless chicken thighs or breasts, cut into 1 to 1.5 inch chunks Chicken thighs stay tender, but breasts work too.
  • 1/3 cup honey Main component of the glaze.
  • 1 to 2 tablespoons hot sauce Use your favorite hot sauce.
  • 2 tablespoons butter Can substitute with olive oil for dairy-free.
  • 2 cloves garlic, minced Or substitute with 1 teaspoon garlic powder.
  • 1 tablespoon apple cider vinegar or lemon juice To add tanginess.
  • 1 teaspoon paprika Smoked paprika is recommended.
  • salt and pepper To taste.
  • Optional heat: pinch of chili flakes or cayenne Adjust based on your heat preference.
  • metal or soaked wooden skewers Soak wooden skewers for at least 20 minutes to prevent burning.

Instructions

Preparation

  • Cut the chicken into 1 to 1.5 inch chunks.
  • Season the chicken with salt and pepper.
  • Thread the seasoned chicken pieces onto skewers.

Cooking

  • Preheat the grill or broiler to high heat.
  • Cook the skewers on high heat until nearly done, about 8-10 minutes, turning occasionally.
  • Meanwhile, prepare the hot honey glaze by melting butter in a pan, then adding minced garlic and cooking for 30 seconds.
  • Stir in honey, hot sauce, paprika, and vinegar; cook until the glaze bubbles, then reduce heat.
  • Brush the glaze onto the skewers in the final minute of cooking to achieve a sticky finish.

Serving

  • Serve immediately with your choice of rice, salad, wraps, or grilled veggies.

Notes

For those who want a lighter glaze, control the amount brushed on. Leftovers can be stored in an airtight container for up to 3 days.
