Greek Shrimp with Tomatoes and Feta

  • 1 lb peeled and deveined shrimp Medium or large works best.
  • 2 tbsp olive oil Use a good quality for the best flavor.
  • 4-5 cloves garlic Adjust based on your taste preference.
  • 28 oz canned crushed or diced tomatoes Canned is fine and convenient.
  • 1 tbsp tomato paste Optional, makes sauce richer.
  • 8 oz block feta Crumble by hand for better melt.
  • 1 tsp red pepper flakes Optional, for added heat.
  • 2 tsp dried oregano Classic herb for this dish.
  • 1 juice lemon Fresh squeeze at the end.
  • to taste salt Adjust based on preference.
  • to taste black pepper Adjust based on preference.
  • 1/4 cup fresh parsley or dill For garnish.

Instructions

Preparation

  • Pat the shrimp dry and season with salt and pepper.
  • Heat olive oil in a large skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds.
  • Add the crushed or diced tomatoes along with oregano and red pepper flakes (if using). If using tomato paste, add it now.
  • Let the sauce simmer for 8 to 10 minutes until it thickens.
  • Add the shrimp to the skillet in a single layer if possible. Cook for 2 to 3 minutes on each side until pink and cooked through.
  • Reduce heat to low. Sprinkle crumbled feta over the shrimp and cover the pan for 1 to 2 minutes.
  • Finish with a squeeze of lemon and garnish with fresh herbs. Adjust salt if necessary.

Notes

Serve with crusty bread, rice, or pasta to soak up the sauce. This dish is forgiving—make it your own with customizable ingredient swaps.
