Ingredients

  • 4 6-ounce salmon fillets
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  • Season salmon with salt and pepper.
  • Heat olive oil in skillet over medium-high heat.
  • Sear salmon skin-side down for 4–5 minutes. Flip and cook another 3–4 minutes. Set aside.
  • Add 2 tablespoons butter to the same pan. Sauté garlic and mushrooms for 5 minutes.
  • Add spinach and cook until wilted.
  • Pour in cream and lemon juice. Simmer for 2–3 minutes. Season.
  • Return salmon to pan. Spoon sauce over and cook for 1–2 minutes more.
  • Garnish with parsley and serve.

Notes

Substitute coconut milk or cashew cream for dairy-free option.
Add red pepper flakes for heat.
Use a fish spatula to flip without breaking the fillet.
