Ingredients
46-ouncesalmon fillets
2tbspolive oil
4tbspunsalted butter, divided
4clovesgarlic, minced
8ozmushrooms, sliced
4cupsfresh spinach
1cupheavy cream
1tsplemon juice
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Instructions
Season salmon with salt and pepper.
Heat olive oil in skillet over medium-high heat.
Sear salmon skin-side down for 4–5 minutes. Flip and cook another 3–4 minutes. Set aside.
Add 2 tablespoons butter to the same pan. Sauté garlic and mushrooms for 5 minutes.
Add spinach and cook until wilted.
Pour in cream and lemon juice. Simmer for 2–3 minutes. Season.
Return salmon to pan. Spoon sauce over and cook for 1–2 minutes more.
Garnish with parsley and serve.
Notes
Substitute coconut milk or cashew cream for dairy-free option. Add red pepper flakes for heat. Use a fish spatula to flip without breaking the fillet.
