Ingredients
  

  • 4 6-ounce salmon fillets
  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, divided
  • 4 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 4 cups fresh spinach
  • 1 cup heavy cream
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Method
 

  1. Season salmon with salt and pepper.
  2. Heat olive oil in skillet over medium-high heat.
  3. Sear salmon skin-side down for 4–5 minutes. Flip and cook another 3–4 minutes. Set aside.
  4. Add 2 tablespoons butter to the same pan. Sauté garlic and mushrooms for 5 minutes.
  5. Add spinach and cook until wilted.
  6. Pour in cream and lemon juice. Simmer for 2–3 minutes. Season.
  7. Return salmon to pan. Spoon sauce over and cook for 1–2 minutes more.
  8. Garnish with parsley and serve.
