- Season salmon with salt and pepper.
- Heat olive oil in skillet over medium-high heat.
- Sear salmon skin-side down for 4–5 minutes. Flip and cook another 3–4 minutes. Set aside.
- Add 2 tablespoons butter to the same pan. Sauté garlic and mushrooms for 5 minutes.
- Add spinach and cook until wilted.
- Pour in cream and lemon juice. Simmer for 2–3 minutes. Season.
- Return salmon to pan. Spoon sauce over and cook for 1–2 minutes more.
- Garnish with parsley and serve.
