Ingredients

dried orzo pasta

medium cucumber diced

large tomato diced

fresh herbs
1/2
cup
olives
1
cup
artichoke hearts
1/4
cup
olive oil

teaspoon
Dijon mustard
1/2
teaspoon
honey
1
teaspoon
lemon zest
2 to 4
tablespoons
lemon juice
salt and pepper
Instructions
Boil salted water and cook orzo until tender
Drain orzo and set aside
Whisk olive oil mustard honey lemon zest and lemon juice
Add warm orzo to dressing and mix
Let cool for 5 minutes
Add cucumber tomato herbs olives and artichokes
Mix gently and adjust seasoning
Serve warm or chilled
Notes
Add vegetables just before serving for best texture
Store in fridge up to 4 days
Refresh with lemon juice before serving
