Fresh Lemon Orzo Salad

Fresh lemon orzo salad with crisp vegetables, herbs, and a bright citrus dressing.

Ingredients

  • 1 1/2 cups dried orzo pasta
  • 1 medium cucumber diced
  • 1 large tomato diced
  • 1/2 cup fresh herbs
  • 1/2 cup olives
  • 1 cup artichoke hearts
  • 1/4 cup olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon honey
  • 1 teaspoon lemon zest
  • 2 to 4 tablespoons lemon juice
  • salt and pepper

Instructions

  • Boil salted water and cook orzo until tender
  • Drain orzo and set aside
  • Whisk olive oil mustard honey lemon zest and lemon juice
  • Add warm orzo to dressing and mix
  • Let cool for 5 minutes
  • Add cucumber tomato herbs olives and artichokes
  • Mix gently and adjust seasoning
  • Serve warm or chilled

Notes

Add vegetables just before serving for best texture
Store in fridge up to 4 days
Refresh with lemon juice before serving
