French Onion Chicken Meatballs

Ingredients

Meatballs

  • 1 lb Ground chicken Preferably not ultra lean
  • 1 large Egg
  • 1/2 cup Almond flour Or gluten-free breadcrumbs
  • 1/4 cup Grated Parmesan
  • 1 tsp Garlic powder
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 tsp Dijon mustard Optional

French Onion Sauce

  • 2 large Onions Thinly sliced
  • 2 tbsp Butter or olive oil
  • 1/4 cup Broth Beef or chicken, gluten-free if needed
  • 1 tbsp Worcestershire sauce Use gluten-free if needed
  • 1 tbsp Fresh thyme Optional
  • 1-2 tsp Cornstarch or low carb thickener For a thicker sauce
  • 1 cup Cheese Gruyere, Swiss, Provolone, Mozzarella, or white cheddar for topping

Instructions

Prepare Meatballs

  • In a bowl, mix together the ground chicken, egg, almond flour, Parmesan, garlic powder, salt, pepper, and Dijon mustard until just combined.
  • Roll the mixture into meatballs, approximately 1.5 inches wide.
  • You should yield about 16 to 20 meatballs.

Cook Meatballs

  • Cook the meatballs by either pan searing in a little oil until browned, then finishing in the sauce, or baking at 400°F for 15 to 18 minutes.

Prepare French Onion Sauce

  • In a large skillet, heat butter or olive oil over medium heat and add the sliced onions with a pinch of salt.
  • Cook the onions, stirring frequently, for about 15 to 20 minutes until they are soft and golden.
  • Add minced garlic and cook for an additional 30 seconds.
  • Stir in broth, Worcestershire sauce, and fresh thyme, letting it simmer for several minutes.
  • For a thicker sauce, stir in a cornstarch slurry or xanthan gum as needed.
  • Once the meatballs are cooked, add them to the sauce and allow them to simmer for 5 to 8 minutes.
  • Top the dish with cheese and cover to melt.

Notes

If the meatball mixture feels sticky, wet your hands before rolling. This dish pairs well with cauliflower mash or sautéed zucchini. Leftovers are great in a lettuce wrap.
