2lbsbaby potatoes, halved
3tbspbutter, melted
3clovesgarlic, minced
1tbspDijon mustard
1tbsplemon juice
0.5tsppaprika
2tbspparsley, chopped
Salt & pepper to taste
Instructions
Preheat oven to 425°F.
Toss potatoes with butter, garlic, Dijon, lemon, paprika, salt, and pepper.
Spread on sheet pan in single layer.
Roast 30–35 mins until golden and crispy.
Sprinkle parsley before serving.
Notes
Store leftovers for up to 4 days in the fridge. Reheat in the oven for best crispiness. Not recommended for freezing. Can be air-fried at 400°F for 20-25 minutes instead of roasting. Sweet potatoes work too, just adjust the bake time.
