Cowboy Butter Roasted Potatoes

Crispy on the outside, fluffy on the inside, these Cowboy Butter Roasted Potatoes are tossed in a zesty garlic-butter sauce with Dijon, lemon, paprika, and herbs. They're the ultimate side dish for any occasion, bold, easy, and addictive.

Ingredients

  • 2 lbs baby potatoes, halved
  • 3 tbsp butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 0.5 tsp paprika
  • 2 tbsp parsley, chopped
  • Salt & pepper to taste

Instructions

  • Preheat oven to 425°F.
  • Toss potatoes with butter, garlic, Dijon, lemon, paprika, salt, and pepper.
  • Spread on sheet pan in single layer.
  • Roast 30–35 mins until golden and crispy.
  • Sprinkle parsley before serving.

Notes

Store leftovers for up to 4 days in the fridge. Reheat in the oven for best crispiness. Not recommended for freezing. Can be air-fried at 400°F for 20-25 minutes instead of roasting. Sweet potatoes work too, just adjust the bake time.
