This cottage cheese flatbread is soft, high in protein, and easy to make in under 30 minutes, no eggs or yeast required. A perfect quick bread for snacks, wraps, or dipping.

Ingredients

  • 1 cup cottage cheese (drained)
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tbsp olive oil (optional, for brushing)

Instructions

  • Preheat oven to 400°F (200°C).
  • Combine cottage cheese, flour, baking powder, and salt in a bowl.
  • Mix until a soft dough forms.
  • Divide dough into 4 balls and roll flat.
  • Place on parchment-lined baking sheet.
  • Brush tops with olive oil if using.
  • Bake for 15–20 minutes until golden.
  • Cool slightly before serving.

Notes

Make sure to drain the cottage cheese to avoid soggy dough.
You can customize with herbs, garlic powder, shredded cheese, or use oat flour for gluten-free version.
Wrap and freeze between parchment for quick weekday use.
