Ingredients

  • 3 ears corn, cut into quarters
  • 4 tbsp coconut yogurt
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Juice of 1/2 lime
  • 1/4 tsp chili powder
  • 1/4 tsp salt
  • 1/4 cup cilantro, chopped
  • 1/2 cup vegan feta (optional)
  • Vegan chipotle mayo for dipping

Instructions

  • Carefully slice corn cobs into quarters lengthwise.
  • Preheat oven to 400°F and line baking sheet with parchment.
  • Mix yogurt, paprika, garlic, salt, and lime juice.
  • Brush mixture onto corn ribs evenly.
  • Sprinkle chili powder and salt on top.
  • Bake for 30 minutes until golden and slightly crispy.
  • Garnish with cilantro and vegan feta.
  • Serve immediately with chipotle mayo.

Notes

Use a sharp knife for safe cutting.
Do not overcrowd the baking tray.
