Instructions
Carefully slice corn cobs into quarters lengthwise.
Preheat oven to 400°F and line baking sheet with parchment.
Mix yogurt, paprika, garlic, salt, and lime juice.
Brush mixture onto corn ribs evenly.
Sprinkle chili powder and salt on top.
Bake for 30 minutes until golden and slightly crispy.
Garnish with cilantro and vegan feta.
Serve immediately with chipotle mayo.
