Blackened Chicken Po' Boy

A delicious and messy sandwich featuring juicy blackened chicken, tangy sauce, and fresh toppings, all nestled in a crusty French roll.

Ingredients

For the Blackened Chicken

  • 1 lb boneless skinless chicken thighs Juicier than breasts, but breasts can be used.
  • 2 tbsp butter or oil For cooking.
  • 1 tbsp smoked paprika Enhances the flavor.
  • 1 tsp cayenne Adjust to taste.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Po' Boy Build

  • 4 rolls French bread rolls Crusty French rolls recommended.
  • 2 cups shredded lettuce
  • 1 cup sliced tomatoes
  • 1/2 cup pickles

For the Sauce

  • 1/2 cup mayonnaise
  • 1 tbsp mustard
  • 1 tbsp lemon juice
  • 1 tbsp hot sauce
  • 1 tbsp minced pickles or relish Optional.

Instructions

Preparation

  • In a small bowl, combine paprika, garlic powder, onion powder, thyme, oregano, cayenne, salt, and black pepper.
  • Pat the chicken dry with paper towels and coat both sides generously with the seasoning mix.
  • Heat a cast iron skillet or any heavy pan over medium-high heat. Add butter or oil and wait until it shimmers.

Cooking

  • Place the chicken in the pan and cook without moving for about 5-7 minutes, or until a dark crust forms.
  • Flip the chicken and cook for another 5-7 minutes until fully cooked (165°F).
  • Let the chicken rest for a few minutes before slicing into strips.

Assembly

  • In a bowl, mix together mayonnaise, mustard, lemon juice, hot sauce, and minced pickles.
  • Toast the French rolls lightly if desired. Spread the sauce on both sides of the rolls.
  • Add shredded lettuce, sliced tomatoes, pickles, and then pile on the blackened chicken.
  • Press gently and serve immediately.

Notes

Assembled po' boys do not store well. Keep ingredients separate for meal prep. Chicken can be frozen for up to 2 months.
