Ingredients
1lbground beef
2cupsshredded green cabbage
1cupshredded carrots
3green onions, thinly sliced
2clovesgarlic, minced
1tspfreshly grated ginger
1tbspsoy sauce
1tspoyster sauce
1tspsesame oil
1/2tspblack pepper
12–15egg roll wrappers
1tbspcornstarch
2tbspwater (for sealing)

Instructions
Heat a skillet over medium heat and cook ground beef until fully browned. Drain excess grease.
Add garlic and ginger and cook until fragrant.
Stir in cabbage, carrots, and green onions. Cook 3–4 minutes until slightly softened.
Mix in soy sauce, oyster sauce, sesame oil, and black pepper. Remove from heat and let filling cool.
Lay one egg roll wrapper in a diamond shape. Add 2–3 tablespoons of filling in the center.
Fold bottom corner over filling, fold in sides, roll tightly upward, and seal with cornstarch mixture.
Preheat air fryer to 400°F (200°C).
Lightly spray egg rolls with cooking spray and place in a single layer in basket.
Air fry 6 minutes, flip carefully, and cook another 5–7 minutes until golden and crispy.
Let cool slightly before serving with dipping sauce.
Notes
Do not overcrowd the air fryer basket. Lightly spraying improves browning and crisp texture. Allow filling to cool before wrapping to prevent soggy wrappers. Reheat leftovers at 375°F for 3–5 minutes to restore crispiness.
