Vegetable Tortilla Roll Ups

These colorful vegetable tortilla roll ups are fresh, creamy, and full of crunch. Made with a smooth lime-kissed cream cheese filling and vibrant vegetables, they’re perfect for parties, picnics, or easy make-ahead lunches.

Ingredients

  • 4 large flour tortillas (8-inch)
  • 1 cup cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp lime juice
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup bell peppers, finely chopped (assorted colors)
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup fresh cilantro, chopped

Instructions

  • In a medium bowl, mix the softened cream cheese, sour cream, lime juice, salt, and black pepper until smooth.
  • Lay the tortillas flat and spread an even layer of the cream cheese mixture over each one.
  • Evenly sprinkle the bell peppers, carrots, cucumber, red onion, and cilantro over the tortillas.
  • Roll each tortilla tightly, pressing gently to seal.
  • Wrap each roll in plastic wrap and refrigerate for at least 30 minutes to firm.
  • Slice into 1-inch pinwheels using a sharp knife and serve chilled.

Notes

You can prepare the filling and chop the vegetables up to one day in advance. Make sure vegetables are well dried to prevent soggy roll ups. Chilling the rolls before slicing is essential for clean, even pinwheels.
