Ingredients
1cupfull-fat cottage cheese (drained)
1cupshredded potatoes (or riced cauliflower for keto)
Instructions
Drain cottage cheese using a fine mesh sieve or paper towel for 10–15 minutes.
If using frozen shredded potatoes, thaw and squeeze out moisture.
Mix drained cottage cheese and potatoes together in a bowl.
Form mixture into small tater-tot-sized logs and press tightly.
Place on a parchment-lined baking sheet.
Lightly spray or brush with oil.
Bake at 400°F for 20–25 minutes, flipping halfway, or air fry at 375°F for 10–12 minutes until golden.
Notes
You can substitute shredded zucchini or cauliflower to reduce carbs. Add optional spices like garlic powder, paprika, or herbs for flavor. These tots freeze well and reheat best in a toaster oven or air fryer.
