Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 3/4 cups all-purpose flour
  • 1 tbsp all-purpose flour (additional)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tbsp instant espresso powder
  • 1/2 tsp salt
  • 3/4 cup mascarpone cheese
  • 3/4 cup confectioners sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract (for frosting)
  • 1 tbsp honey
  • 2 tbsp cocoa powder for dusting

Instructions

  • Cream together softened butter and both sugars until light and fluffy.
  • Add egg and vanilla extract and beat until smooth.
  • In a separate bowl, whisk flour, baking powder, baking soda, espresso powder, and salt.
  • Gradually mix dry ingredients into butter mixture until fully combined.
  • Scoop dough into 1 tablespoon balls and place close together on a baking sheet.
  • Chill dough for 1 hour.
  • Preheat oven to 350°F and line baking sheets with parchment paper.
  • Place six chilled dough balls per sheet and bake 10–12 minutes until lightly golden at the edges.
  • Cool cookies completely on a wire rack.
  • Beat mascarpone, heavy cream, confectioners sugar, vanilla, and honey until soft peaks form.
  • Pipe frosting onto cooled cookies.
  • Dust with cocoa powder before serving.

Notes

Chilling the dough prevents spreading and improves flavor.
Do not overbake; cookies should remain soft in the center.
Store in an airtight container in the refrigerator for up to 4 days.
Allow cookies to sit at room temperature for 10 minutes before serving.
