Ingredients

  • 1 bag frozen tater tots
  • 1 lb turkey or chicken breakfast sausage
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 4 large eggs
  • salt to taste
  • black pepper to taste
  • 1/2 tsp smoked paprika (optional)
  • 1/2 cup shredded cheddar cheese (optional)
  • green onions, sliced (optional)
  • hot sauce (optional)

Instructions

  • Preheat oven and bake tater tots according to package directions until golden and crispy, flipping halfway through.
  • In a skillet over medium heat, cook turkey sausage until browned, breaking into crumbles.
  • Sprinkle flour over sausage and cook for 1 minute, stirring constantly.
  • Slowly whisk in milk until smooth. Simmer 5–8 minutes until thickened. Season with pepper and salt to taste.
  • Cook eggs as desired (scrambled, fried, or poached).
  • Divide crispy tater tots into bowls and top with eggs.
  • Spoon warm sausage gravy over the top and finish with cheese, green onions, or hot sauce if desired.

Notes

Bake tater tots until extra crispy for best texture. Add gravy just before serving to avoid sogginess. If gravy thickens, whisk in a splash of warm milk.
