Ingredients

Main Ingredients

  • 2 large sweet potatoes, peeled and diced Orange or white sweet potatoes work, but butternut squash can be used as a substitute.
  • 1 lb ground beef Use 85-90% lean, or substitute with ground turkey or chicken.
  • 1 tbsp taco seasoning Store bought or homemade.
  • 1 small onion, chopped Optional but adds great flavor.
  • 2 cloves garlic, minced Add in the last minute of cooking beef.
  • 1 15 oz black beans, drained and rinsed Can substitute with pinto beans.
  • 1 cup corn Fresh, frozen, or canned.
  • 1 tbsp olive oil For roasting sweet potatoes.
  • to taste salt and pepper Adjust seasoning as needed.
  • 1 lime for finishing Optional but adds freshness.
  • to taste cilantro For garnish.

Toppings

  • to taste salsa
  • to taste avocado Sliced or diced.
  • to taste shredded cheese
  • to taste Greek yogurt or sour cream
  • to taste jalapenos Optional for heat.

Instructions

Preparation

  • Preheat the oven to 425°F (220°C).
  • Toss diced sweet potatoes with olive oil, salt, pepper, and optional spices. Spread evenly on a baking sheet.
  • Roast sweet potatoes for 20-30 minutes, flipping halfway, until browned and tender.

Cooking the Beef

  • In a skillet, cook ground beef with chopped onion until browned. Break meat up as it cooks.
  • Add minced garlic during the last minute of cooking.
  • Stir in taco seasoning and a splash of water, simmering for a few minutes until saucy.

Finishing Touches

  • Warm black beans and corn either in the skillet or separately in the microwave.
  • Assemble bowls with base layer of rice or greens, then layer with roasted sweet potatoes, taco beef mixture, and toppings of choice.
  • Finish with lime juice and cilantro.

Notes

Do not overcrowd sweet potatoes to ensure they roast rather than steam. Season ingredients in layers for best flavor.
