Preparation
Press the tofu by wrapping it in a towel and placing a heavy pan on top for 15 to 25 minutes.
Cube or tear the tofu into pieces.
Coat the tofu lightly with a mixture of cornstarch, salt, and garlic powder.
Cooking Tofu
Pan fry or bake the tofu until golden and crispy, ensuring not to crowd the pan.
Remove the tofu from the heat when crispy.
Making Sweet Chili Sauce
In a small pan, warm sweet chili sauce, soy sauce, rice vinegar or lime juice, sriracha, maple syrup or honey, and grated garlic until bubbling.
Stir in the cornstarch slurry and cook for 30 to 60 seconds until thickened.
Serving
Toss the crispy tofu with the sauce just before serving to retain the crunch.

Notes
For the crispiest tofu, make sure to press out as much moisture as possible. Serve the sauce on the side or drizzle it on top just before eating to keep the tofu crunchy.
