Swedish Apple Cake (Äppelkaka)

Ingredients

  • 2 large apples (Granny Smith or Honeycrisp)
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 3/4 cup sugar, divided
  • 1/2 cup unsalted butter, softened
  • 2 eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1 pinch salt

Instructions

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • Peel, core, and slice apples. Toss with lemon juice, 1/4 cup sugar, and cinnamon.
  • In a bowl, cream butter and remaining sugar. Add eggs one at a time, then vanilla.
  • Mix in flour, baking powder, and salt until just combined.
  • Pour batter into the pan. Arrange apple slices on top in a spiral pattern.
  • Bake for 35–40 minutes or until golden and a toothpick comes out clean.
  • Cool slightly. Serve warm with vanilla sauce or whipped cream.

Notes

You can substitute the apples with pears for variation.
Store in the refrigerator for up to 5 days or freeze for 2 months.
