Summer Watermelon Salad with Feta Cheese

Ingredients

  • 3 1/2 lbs seedless watermelon, cut into 1-inch cubes
  • 2-3 tbsp fresh lime juice
  • 2 medium shallots, thinly sliced
  • 1/2 cup fresh basil leaves, thinly sliced
  • 4 oz feta cheese, broken into large pieces
  • kosher salt and black pepper, to taste

Instructions

  • Slice the shallots thinly and place them in a small bowl.
  • Pour the lime juice over the shallots and let sit for a few minutes.
  • In a large bowl, add the watermelon cubes and basil.
  • Pour in the shallot and lime mixture.
  • Toss gently to combine all ingredients.
  • Add the feta cheese and mix lightly.
  • Season with salt and pepper to taste.
  • Serve immediately or chill before serving.

Notes

Chill the salad for 30 minutes before serving for best flavor
Add basil just before serving if making ahead
For dairy-free option, replace feta with roasted macadamia nuts or plant-based feta
Avoid overmixing to prevent excess water release
