Ingredients
3 1/2lbsseedless watermelon, cut into 1-inch cubes
2-3tbspfresh lime juice
2medium shallots, thinly sliced
1/2cupfresh basil leaves, thinly sliced
4ozfeta cheese, broken into large pieces
kosher salt and black pepper, to taste
Instructions
Slice the shallots thinly and place them in a small bowl.
Pour the lime juice over the shallots and let sit for a few minutes.
In a large bowl, add the watermelon cubes and basil.
Pour in the shallot and lime mixture.
Toss gently to combine all ingredients.
Add the feta cheese and mix lightly.
Season with salt and pepper to taste.
Serve immediately or chill before serving.
