Strawberry Nougat Chocolate Squares

Ingredients

For the Strawberry Nougat Layer

  • 2 cups Mini marshmallows For that classic nougat chew
  • 2 tablespoons Butter To keep it smooth and not sticky
  • 1 cup White chocolate chips or chopped white chocolate For creaminess
  • 1 cup Freeze dried strawberries crushed into a powder For big strawberry flavor without adding liquid
  • 1 teaspoon Vanilla extract Just a splash to enhance flavor
  • 1 pinch Salt To keep it from tasting flat
  • 1 cup Chopped almonds or pistachios (optional) For added crunch

For the Chocolate Coating

  • 2 cups Chocolate bars or good quality chocolate chips For coating
  • 2 teaspoons Coconut oil Helps chocolate melt smoother and dip easier

Instructions

Preparation

  • Line an 8 by 8 inch pan with parchment paper, leaving an overhang for easy removal.
  • In a medium pot on low heat, melt the butter and add mini marshmallows, stirring until mostly melted and glossy.
  • Remove from heat and stir in white chocolate until smooth. Then add vanilla, salt, and crushed freeze dried strawberries.
  • Press the nougat mixture into the lined pan and refrigerate for 30 to 45 minutes until firm.
  • Melt chocolate with coconut oil, using the microwave or a double boiler on gentle heat.
  • Cut the chilled nougat into squares, then dip each square into melted chocolate, or spoon chocolate over the top and sides.
  • Set coated squares on parchment paper and let them firm up at room temperature or refrigerate for 10 to 15 minutes.

Notes

Store in an airtight container at room temperature for up to 3 days, or in the refrigerator for 7 to 10 days. They can be frozen for up to 2 months. Allow to sit at room temperature for a few minutes before serving to let the nougat soften slightly.
