Spicy Noodles

Quick and flavorful spicy noodles made with garlic, chili oil, and soy sauce. A perfectly balanced dish with heat, sweetness, and umami that comes together in minutes.

Ingredients

  • 200 g noodles (ramen, udon, or wheat)
  • 2 tbsp soy sauce
  • 1 tbsp chili oil with flakes
  • 2 tsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 2 scallions, chopped
  • 1 tbsp vegetable oil
  • optional toppings: fried egg, vegetables, chicken, tofu

Instructions

  • Cook noodles according to package instructions until just tender, then drain and reserve some cooking water.
  • In a small bowl, mix soy sauce, chili oil, brown sugar, rice vinegar, and sesame oil.
  • Heat vegetable oil in a pan over medium-high heat and sauté garlic and scallions until fragrant.
  • Add cooked noodles to the pan and pour in the sauce.
  • Toss quickly to coat noodles evenly, adding a splash of reserved noodle water if needed.
  • Cook for 1–2 minutes until the sauce thickens slightly and becomes glossy.
  • Serve immediately with optional toppings.

Notes

Adjust spice level with chili oil or flakes. Use noodle cooking water to loosen sauce if needed. Work quickly when stir-frying. Add protein or vegetables for a complete meal.
