Ingredients

  • 1 can chickpeas, drained and dried well
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp salt
  • 0.25 cup buffalo sauce (more if desired)
  • 4 flour or whole wheat tortillas
  • 1 cup shredded carrots
  • 0.5 cucumber, thinly sliced
  • 4 lettuce leaves
  • 4 tbsp ranch, tahini, or blue cheese dressing

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easier cleanup.
  • Pat chickpeas dry using a clean towel or paper towels. Toss them with olive oil, garlic powder, onion powder, and salt.
  • Spread chickpeas on the baking sheet and roast for 20–25 minutes, shaking the pan halfway through. Chickpeas should be golden and crunchy.
  • Remove hot chickpeas from the oven and immediately toss with buffalo sauce to coat evenly.
  • Warm tortillas in a pan or microwave until soft and flexible.
  • Layer lettuce, shredded carrots, and cucumber slices onto each tortilla.
  • Top with buffalo chickpeas, drizzle with dressing, and roll wraps tightly. Slice in half if desired.

Notes

Pat chickpeas dry for maximum crispiness. You can roast them in advance for quick meal prep. For less heat, reduce buffalo sauce. Try swapping in tahini, avocado, or cashew cream for plant-based drizzle options. Whole wheat tortillas add fiber and staying power.
