Sour Cream White Chicken Chili

Ingredients

  • 3 cups cooked shredded chicken
  • 2 cans white beans, drained and rinsed
  • 1 can green chiles, diced (4 oz)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 tsp cumin
  • 1/2 tsp chili powder
  • 1 cup sour cream
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • salt and black pepper to taste

Instructions

  • Heat olive oil in a large pot and sauté chopped onion until softened.
  • Add minced garlic and cook until fragrant.
  • Stir in green chiles, cumin, and chili powder, cooking briefly to release flavors.
  • Add shredded chicken, white beans, and chicken broth, then bring to a simmer.
  • Simmer for 15–20 minutes to allow flavors to develop.
  • Remove from heat and stir in sour cream until fully incorporated.
  • Add lime juice and adjust seasoning with salt and pepper.
  • Serve warm with desired toppings.

Notes

Add sour cream off the heat to prevent curdling. Mash some beans for a thicker texture. Adjust spice level to taste. Reheat gently to maintain creamy consistency.
