Ingredients

  • 10-12 cups day-old bread, cubed
  • 10 large eggs
  • 2.5 cups milk
  • 2 cups shredded cheese (cheddar, gruyere, or mix)
  • 8 oz cooked breakfast sausage
  • 1 cup onion, sautéed
  • 1-2 cups spinach or mushrooms, sautéed
  • 1.5 tsp salt
  • black pepper to taste
  • pinch garlic powder
  • fresh parsley or chives for garnish

Instructions

  • Grease a 9x13-inch baking dish.
  • Layer half the bread cubes, followed by sausage, vegetables, and cheese, then top with remaining bread and ingredients.
  • In a bowl, whisk eggs, milk, salt, pepper, and garlic powder.
  • Pour mixture evenly over bread, pressing gently to soak.
  • Cover and refrigerate for at least 4 hours or overnight.
  • Preheat oven to 350°F (175°C) and let casserole sit at room temperature for 20–30 minutes.
  • Bake for 40–55 minutes until center is set and top is golden.
  • Let rest for 10 minutes, garnish with herbs, and serve.

Notes

Use slightly stale bread for best texture. Sauté vegetables before adding to avoid excess moisture. Let casserole rest before slicing. Cover with foil if top browns too quickly.
