Salmon with Blackberry Sauce

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh blackberries
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp Dijon mustard
  • to taste salt and pepper
  • for garnish fresh thyme or basil

Instructions

  • In a saucepan, combine blackberries, honey, vinegar, and olive oil; cook 5–7 minutes.
  • Season salmon with Dijon, salt, and pepper.
  • Preheat grill or skillet to medium-high.
  • Cook salmon 4–5 minutes per side.
  • Mash blackberries to thicken sauce; remove from heat.
  • Drizzle sauce over salmon and garnish with herbs.

Notes

Try substituting raspberries or maple syrup for a twist.
