For the Pasta and Sauce
8ozpastaFettuccine, penne, farfalle, or spaghetti work well.
1lbsalmon filletsFresh or frozen, skin on is fine.
2cupsfresh spinachAdd at the end of cooking to keep it bright.
2clovesgarlicMinced.
1cupheavy creamCan substitute with half and half.
1/2cupparmesan cheeseGrated, for serving.
1tbsplemon juiceAdds brightness to the dish.
1/4tspred pepper flakesOptional, for heat.
Instructions
Cooking the Pasta and Salmon
Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
While the pasta is cooking, heat a pan over medium heat and add the salmon fillets. Cook until the salmon flakes easily with a fork, about 5-7 minutes.
Making the Sauce
In the same pan used for the salmon, add minced garlic and sauté for 1 minute.
Pour in the heavy cream and bring it to a gentle simmer. Add reserved pasta water to loosen the sauce if needed.
Add the cooked pasta and spinach into the pan, stirring until the spinach wilts.
Stir in the lemon juice and season with salt, pepper, and red pepper flakes. Taste and adjust seasoning if necessary.
Notes
Feel free to customize with different veggies or swap in smoked salmon for a different flavor profile. Leftovers can be stored in the fridge for 2-3 days.
