Salmon Pasta with Spinach

Ingredients

For the Pasta and Sauce

  • 8 oz pasta Fettuccine, penne, farfalle, or spaghetti work well.
  • 1 lb salmon fillets Fresh or frozen, skin on is fine.
  • 2 cups fresh spinach Add at the end of cooking to keep it bright.
  • 2 cloves garlic Minced.
  • 1 cup heavy cream Can substitute with half and half.
  • 1/2 cup parmesan cheese Grated, for serving.
  • 1 tbsp lemon juice Adds brightness to the dish.
  • 1/4 tsp red pepper flakes Optional, for heat.

Instructions

Cooking the Pasta and Salmon

  • Bring a large pot of salted water to a boil and cook the pasta according to package instructions.
  • While the pasta is cooking, heat a pan over medium heat and add the salmon fillets. Cook until the salmon flakes easily with a fork, about 5-7 minutes.

Making the Sauce

  • In the same pan used for the salmon, add minced garlic and sauté for 1 minute.
  • Pour in the heavy cream and bring it to a gentle simmer. Add reserved pasta water to loosen the sauce if needed.
  • Add the cooked pasta and spinach into the pan, stirring until the spinach wilts.
  • Stir in the lemon juice and season with salt, pepper, and red pepper flakes. Taste and adjust seasoning if necessary.

Notes

Feel free to customize with different veggies or swap in smoked salmon for a different flavor profile. Leftovers can be stored in the fridge for 2-3 days.
