Salmon Balls with Creamy Avocado Sauce

Crispy on the outside and tender on the inside, these salmon balls are paired with a creamy avocado sauce that brings freshness and flavor to your meal.

Ingredients

For the Salmon Balls

  • 2 cups cooked flaked salmon (or 2 cans drained well) Use fresh or canned salmon, both work well for this recipe.
  • 1 large egg Acts as a binder.
  • 1/3 cup breadcrumbs Can substitute with crushed crackers or panko.
  • 2 tablespoons mayo or Greek yogurt
  • 2 tablespoons chopped green onion For flavor and freshness.
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste hot sauce or cayenne Adjust based on heat preference.
  • to taste salt and pepper Season according to your taste.

For the Creamy Avocado Sauce

  • 1 ripe avocado Must be ripe for best flavor.
  • 2-3 tablespoons plain Greek yogurt or sour cream
  • 1 small clove garlic
  • 1-2 tablespoons lime juice Adjust to taste.
  • to taste salt and pepper Season according to your taste.
  • splash water To thin the sauce to desired consistency.
  • pinch chili flakes or hot sauce (optional) For a little extra heat.

Instructions

Prepare the Salmon

  • Pat the salmon dry with paper towels to help it brown instead of steam.
  • Season with salt, pepper, and garlic powder.
  • Heat a skillet with a bit of oil on medium heat.
  • Sear the salmon for 2 to 3 minutes per side until mostly cooked.
  • Let it cool, then flake it with a fork.

Make the Salmon Balls

  • In a bowl, mix together all ingredients for salmon balls until combined.
  • Form into small balls or flatten into cakes, dampening hands if the mixture is sticky.
  • Heat oil in a skillet on medium heat.
  • Cook for 3 to 4 minutes per side until golden and cooked through.

Prepare the Avocado Sauce

  • Blend avocado, yogurt or sour cream, garlic, lime juice, salt, and pepper until smooth.
  • Add water gradually if the sauce is too thick.
  • Adjust lime and salt to taste.

Notes

Store leftover avocado sauce covered in the fridge with plastic wrap pressed directly onto it to minimize browning. It's best fresh, but can last a day.
