Rosemary Apple Cider Chicken

Ingredients

  • 4 chicken thighs or breasts
  • 3 sprigs fresh rosemary
  • 1 cup apple cider
  • 1 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1 apple, thinly sliced
  • salt and black pepper to taste

Instructions

  • Season chicken with salt and pepper.
  • Heat olive oil in a skillet and add rosemary sprigs to infuse flavor.
  • Sear chicken until golden brown on both sides, then remove and set aside.
  • Add garlic and sliced apples to the skillet and cook until slightly caramelized.
  • Deglaze the pan with apple cider vinegar, scraping up browned bits.
  • Add apple cider, Dijon mustard, and honey, then simmer until reduced by half.
  • Stir in butter and return chicken to the skillet.
  • Bake at 375°F (190°C) for about 15 minutes until chicken is cooked through.
  • Spoon sauce over chicken and serve warm.

Notes

Use fresh apple cider for best flavor. Brown chicken well before simmering. Do not overcook to keep meat juicy. Let sauce reduce fully for a glossy finish. Choose firm apples that hold shape.
