Ingredients

  • 2 lbs russet or Yukon gold potatoes
  • 1 head garlic
  • 4 tbsp butter
  • ½ cup milk or cream
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  • Preheat oven to 400°F. Slice top off garlic head, drizzle with olive oil, wrap in foil, and roast for 35 minutes.
  • Peel and cube potatoes. Boil in salted water until fork-tender, about 15 minutes. Drain well.
  • In a large bowl, mash the potatoes with roasted garlic cloves, butter, and milk until creamy.
  • Season with salt and pepper to taste. Garnish with fresh parsley before serving.

Notes

For extra richness, use half-and-half or heavy cream.
Add grated Parmesan or cream cheese for a flavor boost.
Reheat with a splash of milk to maintain creaminess.
