Ingredients

  • 1/2 cup pomegranate juice
  • 2 tbsp soy sauce
  • 1 clove garlic, minced
  • 4 salmon fillets

Instructions

  • Preheat oven to 400°F.
  • In a bowl, mix pomegranate juice, soy sauce, and garlic.
  • Add salmon fillets, cover, and marinate for 15 minutes.
  • Place fillets on parchment-lined baking sheet, skin side down.
  • Bake for 7 minutes.
  • Meanwhile, boil marinade in a saucepan for 3–5 minutes until thick.
  • Remove salmon and brush with half the glaze.
  • Return to oven and bake for 5–7 more minutes.
  • Serve with remaining glaze drizzled on top.

Notes

Use 100% pomegranate juice for best flavor.
Pat salmon dry before marinating.
Glaze can be stored and reused the next day.
