1cuppumpkin purée
2largeeggs
1cupmilk (or half-and-half for extra richness)
2tbspbrown sugar

8slicesthick bread (brioche or challah work best)

Instructions
In a large mixing bowl, whisk together pumpkin purée, eggs, milk, brown sugar, vanilla, cinnamon, and nutmeg until smooth.
Heat a skillet or griddle over medium heat and add a bit of butter.
Dip each slice of bread into the pumpkin custard mixture, making sure both sides are well coated.
Place the dipped bread slices on the hot skillet. Cook each side for 2–3 minutes, or until golden brown and slightly crisp.
Stack the French toast on plates, sprinkle with powdered sugar, and drizzle with maple syrup. Add extra cinnamon if you like.
