Ingredients

  • 1 cup pumpkin purée
  • 2 large eggs
  • 1 cup milk (or half-and-half for extra richness)
  • 2 tbsp brown sugar
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 0.5 tsp nutmeg
  • 8 slices thick bread (brioche or challah work best)
  • Butter, for cooking
  • Maple syrup & powdered sugar, for serving

Instructions

  • In a large mixing bowl, whisk together pumpkin purée, eggs, milk, brown sugar, vanilla, cinnamon, and nutmeg until smooth.
  • Heat a skillet or griddle over medium heat and add a bit of butter.
  • Dip each slice of bread into the pumpkin custard mixture, making sure both sides are well coated.
  • Place the dipped bread slices on the hot skillet. Cook each side for 2–3 minutes, or until golden brown and slightly crisp.
  • Stack the French toast on plates, sprinkle with powdered sugar, and drizzle with maple syrup. Add extra cinnamon if you like.

Notes

You can prep the custard mix the night before and refrigerate it for quicker cooking in the morning.
Brioche or challah bread works best because of their density and ability to soak up the custard without falling apart.
Use a nonstick skillet or griddle for even cooking.
