Ingredients

  • 1 cup smooth peanut butter
  • 1 cup (200g) sugar (½ cup brown sugar + ½ cup granulated)
  • 1 large egg
  • 1 teaspoon baking soda

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a bowl, beat peanut butter and sugars until creamy (about 2 minutes).
  • Add egg and baking soda, then mix until thick and glossy (2 minutes).
  • Roll dough into small balls and flatten with a fork for a crisscross pattern.
  • Bake for 10–12 minutes until edges are golden. Cool on the baking sheet for 2 minutes, then transfer to a rack.

Notes

Use crunchy peanut butter for texture. Sprinkle flaky sea salt before baking for balance. Dip cooled cookies in chocolate for a festive finish. Store in an airtight container for 4 days, or freeze up to 3 months.
