Coating

  • 1 cup Chocolate Chocolate chips or melting wafers for coating.
  • 1 teaspoon Coconut oil or shortening Optional, helps the chocolate coat more smoothly.

Instructions

Preparation

  • In a medium bowl, stir together the peanut butter and softened butter until smooth. Add vanilla and a pinch of salt if using.
  • Gradually stir in powdered sugar until it forms a thick dough.
  • If the mixture feels soft, chill in the fridge for 15 to 20 minutes.
  • Scoop and roll the mixture into bite-sized balls, about 1 tablespoon each, and place on a parchment lined baking sheet.
  • Chill the balls for another 20 to 30 minutes to firm them up.
  • Melt the chocolate in the microwave in short bursts, stirring until smooth. Add coconut oil or shortening if needed.
  • Dip each ball into chocolate, letting the excess drip off, then return to the parchment to set.

Notes

These peanut butter balls are versatile; you can substitute the peanut butter with almond or sunflower seed butter. They can also be adjusted with additions like mini chocolate chips, crushed graham crackers, or cinnamon for different flavors.
