Ingredients

  • 2 ripe peaches, sliced (yellow preferred)
  • 1 large avocado, sliced or cubed
  • 4 cups arugula or baby spinach
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup toasted almonds or pecans (optional)
  • 1/4 cup crumbled goat cheese or feta (optional)
  • 1 tbsp lime juice (to prevent avocado browning)
  • 2 tbsp olive oil
  • 1 tbsp lime juice or lemon juice (for dressing)
  • 1 tsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  • In a small jar, combine olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Shake or whisk until emulsified. Set aside.
  • Slice peaches and avocado. Toss avocado gently in 1 tbsp lime juice to prevent browning. Slice red onion thinly and toast nuts if using.
  • Place arugula or spinach in a large bowl or on a platter. Layer peach and avocado slices on top. Sprinkle with red onion, goat cheese, and nuts.
  • Drizzle dressing just before serving. Toss gently to combine or serve layered. Garnish with fresh herbs if desired.

Notes

For best results, slice avocados just before serving and toss in lime juice to prevent browning. Use firm-ripe peaches and a mix of greens like arugula or spinach. Add optional goat cheese or toasted nuts for extra texture and flavor.
