Ingredients
2ripe peaches, sliced (yellow preferred)
1large avocado, sliced or cubed
4cupsarugula or baby spinach
1/4cupred onion, thinly sliced
1/4cuptoasted almonds or pecans (optional)
1/4cupcrumbled goat cheese or feta (optional)
1tbsplime juice (to prevent avocado browning)
2tbspolive oil
1tbsplime juice or lemon juice (for dressing)
1tsphoney or maple syrup
1tspDijon mustard
Salt and pepper to taste
Instructions
In a small jar, combine olive oil, lime juice, honey, Dijon mustard, salt, and pepper. Shake or whisk until emulsified. Set aside.
Slice peaches and avocado. Toss avocado gently in 1 tbsp lime juice to prevent browning. Slice red onion thinly and toast nuts if using.
Place arugula or spinach in a large bowl or on a platter. Layer peach and avocado slices on top. Sprinkle with red onion, goat cheese, and nuts.
Drizzle dressing just before serving. Toss gently to combine or serve layered. Garnish with fresh herbs if desired.
