Instructions
Preparation
In a large pot, heat olive oil over medium heat and sauté chopped onion and minced garlic until softened.
Pour in crushed tomatoes or marinara sauce, and stir in Italian seasoning along with a pinch of salt and pepper.
Add the refrigerated or frozen tortellini and a splash of water or broth to the pot. Stir until combined.
Cooking
Bring to a gentle simmer and cook until tortellini is tender, about 5-7 minutes.
Lower the heat and stir in the cream and fresh spinach. Cook until the spinach has wilted and the sauce is creamy.
Finish with grated Parmesan cheese and adjust seasoning if necessary.
Serve warm and enjoy your cozy meal!
Notes
For added protein, consider stirring in cooked chicken or beans. Store leftovers in an airtight container for up to 3 days.
