Main Ingredients

  • 12 oz Refrigerated cheese tortellini Can substitute with frozen tortellini if needed.
  • 28 oz Crushed tomatoes or marinara sauce Choose depending on preference.
  • 2 cups Fresh spinach A big handful or two.
  • 1 cup Heavy cream or half and half For creaminess.
  • 1 tbsp Olive oil For sautéing.
  • 2 cloves Garlic, minced
  • 1 medium Onion, chopped
  • 1 tsp Italian seasoning
  • to taste Salt and pepper Adjust according to taste.
  • 1/2 cup Parmesan cheese, grated For finishing.

Instructions

Preparation

  • In a large pot, heat olive oil over medium heat and sauté chopped onion and minced garlic until softened.
  • Pour in crushed tomatoes or marinara sauce, and stir in Italian seasoning along with a pinch of salt and pepper.
  • Add the refrigerated or frozen tortellini and a splash of water or broth to the pot. Stir until combined.

Cooking

  • Bring to a gentle simmer and cook until tortellini is tender, about 5-7 minutes.
  • Lower the heat and stir in the cream and fresh spinach. Cook until the spinach has wilted and the sauce is creamy.
  • Finish with grated Parmesan cheese and adjust seasoning if necessary.
  • Serve warm and enjoy your cozy meal!

Notes

For added protein, consider stirring in cooked chicken or beans. Store leftovers in an airtight container for up to 3 days.
