Instructions
Preparation
Soften cream cheese by leaving it out for 30 to 45 minutes.
In a mixing bowl, beat the softened cream cheese with powdered sugar and vanilla until fluffy.
Gradually add pink food coloring until you achieve the desired color.
Stir in the graham cracker crumbs until mixed well.
Chill the mixture in the refrigerator for 45 to 90 minutes, or freeze for 20 to 30 minutes until firm enough to roll.
Once chilled, scoop small amounts of the mixture and roll them into balls.
If desired, coat the balls in melted chocolate or roll them in extra graham crumbs.
Chill again until set before serving.
Notes
For gifting, chill the bites until firm and store in mini cupcake liners inside a sturdy container. These can be kept in the fridge for up to 5 days or frozen for 2 months.
