2/3cupgrated carrot (about 2 medium carrots)
1/2cupnut butter (almond, peanut, or sunflower seed butter)
1/4cupmaple syrup or honey
1/4cupshredded coconut (optional)
1/4cupground flaxseed or chia seeds
1/2teaspoonground cinnamon
1/4teaspoonground ginger (optional)
1/4cupmini chocolate chips or raisins (optional)
1pinchsea salt
Instructions
Grate the carrots using a fine grater and squeeze out excess moisture with a paper towel.
In a large bowl, mix rolled oats, flaxseed, cinnamon, ginger, and salt.
Add nut butter, maple syrup, and grated carrot. Stir until a sticky dough forms.
Fold in optional mix-ins like coconut, chocolate chips, or raisins.
Roll mixture into 1-inch balls using your hands or a cookie scoop.
Chill in the fridge for 15–30 minutes to firm up.
Store in an airtight container in the fridge for up to 7 days, or freeze for longer storage.
