Soft, chewy, and spiced like carrot cake, these no-bake carrot energy bites are a quick and healthy snack made with oats, nut butter, and fresh carrots. Perfect for meal prep, lunchboxes, or a post-workout energy boost.

Ingredients

  • 1 cup rolled oats
  • 2/3 cup grated carrot (about 2 medium carrots)
  • 1/2 cup nut butter (almond, peanut, or sunflower seed butter)
  • 1/4 cup maple syrup or honey
  • 1/4 cup shredded coconut (optional)
  • 1/4 cup ground flaxseed or chia seeds
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger (optional)
  • 1/4 cup mini chocolate chips or raisins (optional)
  • 1 pinch sea salt

Instructions

  • Grate the carrots using a fine grater and squeeze out excess moisture with a paper towel.
  • In a large bowl, mix rolled oats, flaxseed, cinnamon, ginger, and salt.
  • Add nut butter, maple syrup, and grated carrot. Stir until a sticky dough forms.
  • Fold in optional mix-ins like coconut, chocolate chips, or raisins.
  • Roll mixture into 1-inch balls using your hands or a cookie scoop.
  • Chill in the fridge for 15–30 minutes to firm up.
  • Store in an airtight container in the fridge for up to 7 days, or freeze for longer storage.

Notes

Add raisins or chopped dates for extra sweetness. Roll in coconut or cocoa powder for variety. Store in the fridge for up to 7 days or freeze for up to 2 months.
