Mushroom Pasta with Burrata Bliss

Ingredients

Pasta and Main Ingredients

  • 8 oz Pasta like fettuccine, tagliatelle, or rigatoni
  • 1 cup Rehydrated morel mushrooms (or fresh if available) If using dried, follow the rehydration method.

Sauce Ingredients

  • 2 Tbsp Butter
  • 2 Tbsp Olive oil
  • 2 cloves Garlic Chopped
  • 1 small Shallot Chopped (or onion if that is available)
  • 1 cup Heavy cream or half and half
  • 1/2 cup Parmesan cheese Grated
  • 1 ball Burrata cheese One ball for two people, or two if desired
  • to taste Salt
  • to taste Black pepper
  • to taste Chili flakes Optional for heat
  • splash Strained mushroom soaking liquid Optional
  • to taste Chopped parsley or chives Optional for garnish

Instructions

Cooking the Pasta

  • Boil the pasta with salted water until just tender. Before draining, scoop out a mug of pasta water and set it aside.

Browning the Mushrooms

  • In a large skillet, warm olive oil and butter. Add the morels and cook until they smell nutty and look lightly browned.

Adding Aromatics

  • Stir in the shallot and cook until soft. Add the garlic for about 30 seconds, stirring to prevent bitterness.

Making it Creamy

  • Pour in the cream and bring to a gentle simmer. Stir in parmesan until melted. Add a splash of mushroom soaking liquid, taste and adjust as needed.

Tossing with Pasta

  • Add drained pasta to the skillet and splash in some reserved pasta water until the sauce is glossy and clings to the noodles.

Finishing Touch

  • Plate the pasta and top each serving with burrata. Crack open the burrata at the table so it drapes into the hot pasta. Finish with pepper and herbs.

Notes

For a heartier meal, pair with a simple protein like air fryer herb chicken thighs. You can substitute fresh morels with cremini, shiitake, or oyster mushrooms if needed. Ensure mushrooms are cooked thoroughly.
