Ingredients
For the Cookies

unsalted butter, at room temperature
Do not soften into a puddle

granulated sugar
Can replace with powdered sugar for a softer bite

matcha powder
Sift to avoid clumps

all-purpose flour
Can swap some with cornstarch for a delicate texture

vanilla extract
Almond extract can also be used

Instructions
Preparation
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream the butter and granulated sugar until light and fluffy.
Sift the matcha powder with the flour and baking powder, then gradually combine with the butter mixture.
Add the vanilla extract and mix until fully incorporated.
If the dough is sticky, chill it in the refrigerator for 20-30 minutes.
Baking
Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them apart.
Bake for 10-12 minutes, or until the edges look set and the centers are slightly soft.
Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Store in an airtight container at room temperature for 4-5 days. Freeze baked cookies for up to 2 months. To refresh, bake at 300°F for a few minutes.
