Ingredients

Yukon Gold potatoes

garlic bulb

butter

heavy cream
Salt to taste
Black pepper to taste
Instructions
Preheat oven to 400°F and roast garlic for 40 minutes.
Peel and cut potatoes, then boil in salted water until tender.
Drain potatoes and let them dry briefly.
Mash potatoes using a masher or ricer.
Squeeze roasted garlic into potatoes and mix.
Add butter and warm cream, then stir gently.
Season with salt and pepper and serve warm.
Notes
Use warm cream for best texture.
Do not overmix to avoid gluey potatoes.
Add herbs or cheese for variation.
