Mashed Potatoes with Roasted Garlic

Ingredients

  • 2 lbs Yukon Gold potatoes
  • 1 whole garlic bulb
  • 4 tbsp butter
  • 1/2 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  • Preheat oven to 400°F and roast garlic for 40 minutes.
  • Peel and cut potatoes, then boil in salted water until tender.
  • Drain potatoes and let them dry briefly.
  • Mash potatoes using a masher or ricer.
  • Squeeze roasted garlic into potatoes and mix.
  • Add butter and warm cream, then stir gently.
  • Season with salt and pepper and serve warm.

Notes

Use warm cream for best texture.
Do not overmix to avoid gluey potatoes.
Add herbs or cheese for variation.
