Ingredients

  • 3 large sweet potatoes, peeled and cubed

  • 3 tbsp maple syrup
  • ½ cup chopped pecans, toasted

Instructions

  • Preheat oven to 400°F (200°C).
  • Toss sweet potato cubes with olive oil, cinnamon, and salt.
  • Spread on a baking sheet and roast for 25 minutes until tender and lightly golden.
  • Remove from oven, drizzle with maple syrup and sprinkle with pecans.
  • Return to oven and roast for another 5 minutes.
