Ingredients

  • 1 lb carrots, peeled and cut into sticks or coins
  • 2 tbsp pure maple syrup
  • 1 tbsp unsalted butter or olive oil
  • 1/2 tsp fresh thyme leaves (or 1/4 tsp dried thyme)

Instructions

  • Steam or boil the carrots for 4–5 minutes until just tender.
  • In a skillet, melt the butter (or heat oil) over medium heat.
  • Add maple syrup and thyme, stir to combine.
  • Toss in the carrots and gently coat with the glaze.
  • Cook for 5–7 minutes, stirring occasionally, until glazed and slightly caramelized.
  • Season with salt and pepper.
  • Serve warm.

Notes

For a dairy-free version, use olive oil instead of butter.
Fresh thyme adds the best aroma, but dried works well too.
