Ingredients

  • 1 mango, peeled and cut into ¾ inch chunks
  • ½ English cucumber, cut into ¾ inch chunks
  • ½ red bell pepper, small diced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh squeezed lime juice
  • 1 tablespoon white wine vinegar
  • 2 teaspoons honey
  • small handful cilantro
  • pinch kosher salt

Instructions

  • Combine mango, cucumber, and red bell pepper in a bowl.
  • Mix dressing ingredients in processor or jar.
  • Pour dressing over salad.
  • Toss until evenly coated.
  • Chill before serving.
