English cucumber, cut into ¾ inch chunks

red bell pepper, small diced

Instructions
Combine mango, cucumber, and red bell pepper in a bowl.
Mix dressing ingredients in processor or jar.
Pour dressing over salad.
Toss until evenly coated.
Chill before serving.
