Instructions
Cooking the Hash
Heat a big skillet over medium-high heat and add oil or butter.
Toss in the diced potatoes with salt and pepper. Spread them out and let them sit for a few minutes before you stir.
Once the potatoes are halfway tender, add onions and peppers. If the pan looks dry, add a tiny splash more oil. Cook until the veggies soften.
Add your cooked sausage or bacon and sprinkle in smoked paprika if desired.
Make wells in the hash, crack eggs into the dips, cover the pan and cook until the whites are set.
Add cheese at the end, cover again for about a minute, and let it melt. Finish with toppings.
Notes
If cooking for someone who prefers milder flavors, keep spicy toppings on the side to accommodate different taste preferences.
