Ingredients

  • 3 cups diced potatoes
  • 1 small onion, chopped
  • 1 bell pepper, chopped
  • 1 cup cooked breakfast sausage
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp smoked paprika (optional)
  • 2-4 eggs
  • 3/4 cup shredded cheese
  • 2 tbsp oil or butter
  • green onions, hot sauce, salsa, sour cream, or avocado for topping

Instructions

  • Heat oil or butter in a large skillet over medium-high heat. Add diced potatoes, season with salt and pepper, and cook until golden and crispy, stirring occasionally.
  • Add chopped onion and bell pepper, cooking until softened.
  • Stir in cooked sausage and smoked paprika if using.
  • Create small wells in the hash and crack eggs into each well.
  • Cover the skillet and cook until egg whites are set and yolks reach desired doneness.
  • Sprinkle shredded cheese over the top, cover briefly to melt.
  • Serve hot with desired toppings.

Notes

Do not overcrowd the pan to ensure crispy potatoes. Add eggs at the end and cover to control doneness. Adjust toppings and spice level to taste.
