Loaded Beef and Potato

  • 1 to 1.25 pounds ground beef (lean) Use lean ground beef for less grease.
  • 1.5 pounds potatoes, diced small (Yukon Gold or russet) Cut into small, even cubes.
  • 1 small onion, chopped
  • 2 cloves garlic, minced (or 1 teaspoon garlic powder)
  • 1 teaspoon smoked paprika
  • to taste salt and pepper Season to taste.
  • 2 to 3 tablespoons oil (divided) For frying the potatoes and beef.
  • 1 cup shredded cheese (cheddar or a blend)
  • as needed sour cream or Greek yogurt, green onions, cooked bacon bits, hot sauce, salsa Toppings.

Cooking Instructions

  • Heat 2 tablespoons of oil in a large skillet over medium high heat.
  • Add diced potatoes in an even layer and sprinkle with salt and pepper. Let them sit for a few minutes before stirring.
  • Once the potatoes have some color, add a splash of water (about 2 tablespoons) and cover with a lid for 4 to 6 minutes.
  • Remove the lid and let any extra moisture cook off.
  • Scoot the potatoes to one side of the skillet, add a little more oil if dry, then add the ground beef on the open side. Break it up and cook until mostly browned.
  • Toss in onion and garlic with the beef. Add smoked paprika and more salt and pepper, then stir everything together.
  • Turn heat down to medium low, sprinkle cheese over the top, and cover for 1 to 2 minutes until melted.
  • Remove from heat and serve with desired toppings.

Notes

For meal prep, store toppings separately to keep potatoes crisp. Reheat the dish in a skillet with a splash of oil for best results. For added heat, include jalapenos or chili flakes.
