Lemon Herb Butter Salmon and Asparagus

Ingredients

  • 4 salmon fillets (6 oz each, skin-on)
  • 1 lb fresh asparagus, trimmed
  • 3 tbsp unsalted butter, melted
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juice and zest
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1 tsp dried thyme (or 1 tbsp fresh)
  • Salt and black pepper, to taste
  • Lemon slices and chopped fresh parsley (for garnish)

Instructions

  • Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper or foil.
  • Arrange salmon fillets in the center of the sheet pan and asparagus around them.
  • In a small bowl, whisk together melted butter, olive oil, garlic, lemon juice and zest, oregano, thyme, salt, and pepper.
  • Drizzle the lemon-herb butter mixture evenly over the salmon and asparagus.
  • Bake for 12–15 minutes, or until salmon flakes easily and asparagus is tender-crisp.
  • Optional: Broil for 2 minutes for a golden, caramelized finish.
  • Garnish with lemon slices and chopped parsley before serving.

Notes

Use similar-sized salmon fillets to ensure even cooking. Pat salmon dry before seasoning for the best crust and flavor absorption. Swap lemon with orange zest for a sweeter citrus twist. Add red pepper flakes for a spicy kick. To reheat, warm in the oven at 325°F for 10–12 minutes — avoid microwaving.
